This book is by the authors, Sami Tamimi and Tara Wigley, who are both key figures in the Ottolenghi empire. Tamimi has written previous books with Yotam Ottolenghi and Ottolenghi here writes the foreword to Falastin.
It is an exploration of the food of Palestine; a "tale of a formidable food nation that gave the region and the rest of the world some of its most beloved foods."
Sami grew up in Palestine - there is no P in the Arabic language, hence Falastin - and as well as the food of that country this book is about the people of Palestine and their voices. You don't necessarily need to know the intricacies of Middle East politics to enjoy this book the recipes themselves are more than enough. Among some of the recipes that immediately made me want to get in to the kitchen are those for roasted aubergine, feta yoghurt, Aleppo chilli and pistachio, sumac onion and herb oil buns and pistachio harisa (not to be confused with harissa).
