In her new book Anna Jones limits the pans and ingredients for all-in-one dinners that keep things fast and easy. She also further advances the argument that there is a way of eating and consuming that is mindful of the planet. This is no hair shirt endeavour; her approach is not that of rigid rules but rather suggestions of how to cut down unnecessary consumption, of being mindful with the money that we have to spend on food, cutting down food waste but still celebrating the enlivening brilliance of food.
The recipes are grouped by what vessel they are cooked in. Stews, soups and curries fill the One Pot chapter; fritters, pancakes and crispy veg are in the One Pan chapter and all-in-one desserts and dinners are in the One Tray section. Immediately jumping out at me for recipes that I want to try are pan-roasted cauliflower with saffron butter, Japanese sweetcorn fritters and chocolate, rosemary and olive oil cake.
